Apple Cinnamon Baked Oatmeal Muffins

Gluten free, Sugar free, Dairy free



These muffins are a great on-the-go breakfast or snack. They freeze easily, and are nutritious. 

Equivalent of two eggs, using egg replacer
2 mashed bananas
1 1/2 c applesauce, unsweetened
2 apples, peeled and diced
2 c almond milk
1 tsp vanilla
1/4 c flax
5 c oats
1 Tbs cinnamon
3 tsp natural baking powder

Mix all the ingredients, and bake in muffin tins at 350 for 30 minutes.

Homemade Granola Bars

I came up with this granola bar recipe, and really like it's versatility. I've made several variations of this by adding chocolate chips and dried banana chips, dried cranberry and apricots, or raisins and dried apples in place of the trail mix. It's a great alternative to the store bought variety, and doesn't have all of the added ingredients and preservatives. These are softer than a 'crunchy' granola bar, but not as soft as a cookie... somewhere in between. This recipe makes 24 bars.

Granola Bars
4 cups rolled oats (not quick oats)
1 cup trail mix or mixed nuts, chopped 
1 cup melted peanut butter
1/c cup apple sauce
1 mashed banana
1/2 cup honey

Spray a cookie sheet with non stick spray or line with parchment paper. spread the dough evenly out in the pan, making sure to not leave the edges too thin. Bake in a preheated 350 oven for 25 minutes.
Slice into bars or squares while still hot, and allow them to cool in a dry area. Store them in a large zip lock or air tight container, and enjoy these healthy snacks on the go!

Nutritional Value (per bar): 179 calories, 8g fat, 1g saturated fat, 24mg sodium, 20g carbohydrates, 3g fiber, 7.5g sugar, 6g protein
